Shakshuka

Fletchers take on a SHAKSHUKA

Ingredients

1 full spicy Chorizo

8 slices of Milano salami

1 onion

2 garlic cloves

1 red or green chilli

Bunch of fresh coriander

150g fresh cherry tomatoes

1 tin / 400g mix beans

1 tin / 400g chopped tomatoes

1 tbsp tomato puree

Salt and pepper

Pinch of dried chilli flakes

Pinch of mixed herbs

Method

Chop the onion and chilli and grate the garlic cloves then add to a hot pan. Fry for a couple of minutes, chop the chorizo and add to the pan along with the fresh cherry tomatoes. Follow with the mixed beans and tinned tomatoes and season with salt pepper.

Add mixed herbs and chilli flakes, stir well and let this simmer for 6 minutes until the beans soften.

Crack 2 eggs into the pan and place in a pre-heated oven at 190c for a 3/4 min then once the eggs are cooked, dress with a pinch of fresh coriander and serve.
