Rustic Bake
Ingredients :
1 small bag of new potatoes
1 whole chorizo
2 free range chicken breasts
1 bunch of asparagus
1/2 pack of cherry tomatoes
2 garlic cloves
2 whole lemons
Olive oil
Salt and pepper
Method :
Pre-heat oven at 190c
Chop up the chorizo and chicken breast
Cut the new potatoes in to halves and finely chop the garlic. Add the new potatoes half the garlic to a baking tray with some olive oil and season with salt and pepper. Place in the oven 15/18 minutes (part bake)
Take them out of the oven giving the a good shake, then add the chicken, chorizo, cherry tomatoes and asparagus.
Add any left over garlic, a drop more olive oil salt and pepper and finally cut the lemons into quarters squeezing all the juice over the ingredients.
Add the lemon quarters into the tray and bake for another 20-25 minutes then you’re ready to serve.
