Chicken Saag Curry
Ingredients
2 red chillies
2 cloves of garlic
4 piece of garlic, peeled
1 onion, chopped
1 tsp ground cumin
1 tsp ground coriander
1 tsp garam masala
1/2 tsp turmeric
4 cardamom pods
4 chicken breasts cut up
Handful of spinach
150g red lentils
1 tin of chopped tomatoes
Method
Heat a tbsp of oil in a pan and add the onion, garlic, chilli and ginger and fry lightly for 2 minutes. Add the spices and continue to fry for another minute until the spices become fragrant. Add the chicken and stir well covering it all over with the spice mixture. Cook the chicken through and then add the tinned tomatoes and a cup of water. Simmer on a low heat for 25 minutes adding water if the sauce becomes too thick. Season with salt and pepper to taste.
Once ready, stir in the spinach and serve.
