Steak with a rustic dressing


The Steak

Ingredients :

1/2 fillet steaks

2 tbsp soy sauce

2 tbsp Worcestershire sauce

Knob of butter

Method :

Take your fillet steaks out of the fridge 10 minutes before your begin to cook them. Place the steaks on a plate and begin to season with the soy sauce and Worcestershire sauce with a pinch of black pepper (Season both sides of the steaks) Leave them to rest while you make the dressing.

The Dressing

Ingredients :

Bunch of fresh coriander

2/3 large tomatoes

1/2 red or green chillis

Tbsp dried chilli flakes

2 garlic cloves

2 spring onions

Good squeeze of fresh lemon juice

Method :

Finely chop the fresh coriander, tomatoes, chillies, garlic and spring onions and add them to a bowl. Add a good squeeze of fresh lemon juice and give it good stir.

Method (back to the steaks)

Place a frying pan on a medium heat and add a knob of butter. Put your steak in the pan and cook them to your preference.

Rare 2 minutes each side (my preference)

Medium 3 minutes each side

Well done 4 minutes each side

Once cooked take them out of the pan and leave to rest before slicing to serve and adding your rustic dressing
