Cupcakes (with the kids)

Ingredients:
110g softened butter
110g golden caster sugar
2 large eggs
½ tsp vanilla extract
110g self-raising flour
125g cocoa powder
(For the icing)
250g icing sugar
30ml warm water
Method:
Pre heat oven to 180c and fill a 12/14 cupcake tray with cases. Mix softened butter and caster sugar together until pale and fluffy then whisk in 2 large eggs,scraping down the sides of the bowl after each addition. Add the vanilla extract,then self-raising flour and a pinch of salt, whisk until just combined then spoon the mixture into the cupcake cases. Bake for 10 minutes until golden brown. Insert a skewer into the middle of each cake, if it comes out clean, they are ready. Leave to cool completely
For the icing
Add the icing sugar to a bowl and add 30ml of warm water, mixing until you get the perfect consistency
Then decorate the cupcakes
It’s up to you how crazy you get. We added sprinkles (or as I know them hundreds & thousands)
